Smokehouse
The Smokehouse lies between the schoolhouse and the Hiawatha Building. It contains the material and explains the processes used to preserve meat (mostly pork and poultry) before the days of refrigeration..
A large barrel held the meat (such as simulated slabs of bacon and hocks of ham) in a salt solution (brine). There are also hooks for hanging the meat while a fire was lit in a pit, using the smoke as a further preservative.
